Recipe #3: The Mushroom Risotto...


 For years I was afraid of risotto. Not to eat it of course! Risotto is my one of my all time food crushes but I was certainly intimidated by this delicious dish. When we first discussed with Panagiotis Karafoulidis about what recipes we can present in the blog it was my first thought.  Once I tried this recipe and  realized how easy it was to create I became obsessed with cooking risotto!  One of my favourite risottos is a simple mushroom risotto. It's heaven on a plate and the recipe that Panagiotis gave us is absolutely .... top!

Για χρόνια φοβόμουν το ριζότο.  Όχι να το φάω φυσικά!  Το ριζότο είναι ένα από τα πιάτα που με τρελαίνουν άλλα ταυτόχρόνα ένα πίατο πού φοβόμουν πολύ να φτιάξω μόνη μου.  Όταν πρωτοσυζητήσαμε με τον Παναγιώτη Καραφουλίδη τι συνταγές μπορούμε να παρουσιάσουμε, ήταν η πρώτη μου σκέψη.  Από τη στιγμή που δοκίμασα να φτιάξω τη συνταγή του Παναγιώτη και κατάλαβα πόσο εύκολο έιναι έγινε η νέα μου εμμονή στο μαγείρεμα.  Ένα από τα πιο αγαπημένα μου ριζότο είναι το ριζότο μανιταριών.  Ο παράδεισος στο πιάτο σας μιας και η συνταγή που μας  έδωσε ο Παναγιώτης είναι πραγματικά κορυφαία!

Μushroom Risotto with Mascarpone /  Ριζότο μανιταριών με μασκαρπόνε

Ingredients for four portions / Yλικά για τέσσερα άτομα


    400 gr Rice Arborio or Carnaroli / 400 γρ  Ρύζι Arborio ή Carnaroli
 1 medium onion chopped / 1 μέτριο κρεμμυδι ψιλοκομμένο
    500gr various mushrooms / 500 γρ ποικιλία μανιταριών
    200 gr chopped leek / 200 gr πράσο ψιλοκομμένο
    1 garlic clove chopped / 1 σκελίδα σκόρδο ψιλοκομμένη
800 ml chicken broth / 800 ml ζωμό κοτόπουλου
400 ml white wine / 400 ml λευκό κρασί
100 gr parmesan / 100 gr παρμεζάνα
100 gr Mascarpone 
40 gr fresh butter / 40 gr φρέσκο βούτυρο
Olive oil / Ελαιόλαδο
Fresh thyme, salt and pepper / Φρέσκο θυμάρι, αλάτι, πιπέρι μαύρο


Instructions / Εκτέλεση

We heat the oil in a pan and we sauté our vegetables.
We add the rice and the thyme .
We deglaze with the wine and let it absorb it.

 Σε μια κατσαρόλα σοτάρουμε τα λαχανικά με το λάδι.
Προσθέτουμε το ρύζι με το θυμάρι και μόλις αρχίσει να κολλάει το σβήνουμε με το κρασι.





We add half of the chicken broth and once its absorbed we repeat with the other half.

Αφού τραβήξει το κρασί ρίχνουμε τον μισό ζωμό, το αφήνουμε να τραβήξει πάλι και επαναλαμβάνουμε το ίδιο με τον υπόλοιπο ζωμό.



We take the pan out of the fire and we add the butter, the Mascarpone and the parmesan.  We mix them well, until they  become incorporated.
We add salt and pepper and we serve.

Βγάζουμε την κατσαρόλα από την φωτιά και προσθέτουμε μέσα το βούτυρο, το Mascarpone και την παρμεζάνα. Ανακατεύουμε καλά , να ενσωματωθούν τα υλικά.

Ρίχνουμε αλάτι και πιπέρι και σερβίρουμε.



And the most flavour-filled, creamy mushroom risotto is ready.  I am sure that you will love it!!!

  2. και γω το ριζότο το φοβάμαι κι ας μ αρέσει. άραγε στην συγκεκριμένη συνταγή αν αφαιρούσα τα μανιτάρια τί άλλο θα μπορούσα να βάλω?
